Anthocyanin gives blueberries their color. It also helps prevent cognitive decline, prevent cancer, improve vision, and lower cholesterol. Fruits and vegetables that are yellow provide the building blocks for vitamin A. You can’t get too much as you can if you take vitamin A capsules. Each fruit and vegetable color has something different to offer, and why you need a rainbow of colors on your plate.
